These orange bars are a great way of using up some of your Moore’s Whiskey Marmalade (see other post). With a shortbread crust and a creamy citrusy filling, these are absolutely irresistible.
Ingredients
Shortbread
300g Butter at room temp
600g Flour
100g Caster sugar
Filling
2tbs Moore’s Irish Whiskey Marmalade or the juice of 2 oranges
1 Orange rind
4 Eggs
600g Caster sugar
50g Flour
50g Icing sugar
Method:
Step 1:
Pre-heat the oven to 170C fan.
Step 2:
For the shortbread crust, use your fingers to mix the butter, flour and caster sugar in a large bowl. Transfer this to a lined baking tray and press the mixture into the tray until it is even. Bake for 20 minutes.
Step 3:
for the filling, whisk together the eggs and sugar. Whisk in the flour. Finally add the orange rind and the Moore’s Whiskey Marmalade (or the juice of 2 oranges).
Step 4:
When the shortbread is baked, pour the filling over it and return to the tray to the oven for another 20-25 minutes or until the edges of the filling are light brown.
Step 5:
Allow to cool and then cut it into squares. Add icing sugar for the presentation.
